February = Raspberry Jam!

Love is in the air and who doesn't love going to Janet's for quilt group!  We missed Ryan Gosling this year but Janet made up for it with gifting us her raspberry jam!!  The lunch was so yummy and here is the recipe for her heart warming soup!

Olive Garden Pasta E Fagioli Soup

2 lbs. ground beef                       
1 onion, chopped                         
3 carrots, shredded
1 c. celery, chopped
2 (28 oz.) cans diced tomatoes, undrained           Brown ground beef in large skillet.  Drain fat.
1 (16 oz) can red kidney beans, drained               Add beef and all ingredients except the pasta into
1 (16 oz) can white kidney beans, drained           a large crockpot.  Cook on low 7-8 hrs./high 4-5
4 c. beef stock                                                            Before serving, cook pasta according to package
3 tsp. oregano                                                             directions.  Drain pasta and add to soup.
2 tsp. pepper
5 tsp. parsley
1 tsp. tabasco sauce
1 (20 oz) jar spaghetti sauce
8 oz. pasta ( I use ditali pasta
)


Fluffy Cheesecake  (make ahead – needs fridge time)

1 ½ pkg. graham crackers, crushed                           IMPORTANT:  Evap. Milk must be chilled, as well as the metal
½ c. butter, melted – maybe more                             bowl to whip it in.
1 sm. pkg. lemon jello                                                Prepare graham cracker crust.  Press in bottom of 9x13 pan.
1 c. boiling water                                                         Dissolve jello in boiling water.  Cool it in the fridge, but do not
1 12-oz. can evaporated milk, chilled                     let it get thick.  Just cooled down.
12 oz. cream cheese, softened                                   Cream together the softened cream cheese with sugar, vanilla,  
½ c. sugar                                                                       lemon peel.  Then add the cooled jello and mix it in well.
1 tsp. vanilla                                                                 Whip the evap. milk until soft peaks form.  Fold in the cream cheese/

1 Tbl. Grated lemon peel                                            jello mixture.  Refrigerate for 8 hours.

Julie; you never disappoint!  This Christmas quilt is so cute.  The hand quilting was different on every square.  

Perfect name for a perfect quilt.

Janets' grandkids are so lucky to have this "I Spy" quilt to cuddle up with.  We all loved the black and white trim.
